Oolongs are considered to be semi-fermented teas from the Camellia sinensis plant with flavors that extend from light and crisp green tea flavor to the much richer, earthier dark oolongs. The production of oolong requires withering and slight crushing to induce fermentation which may range from 20-80%. Oolongs have a very nuanced flavor that may be floral, grassy, smoky, earthy or many variations in between. While they are extremely popular in China and Taiwan, consumption of oolong in other countries is relatively new.
